We always wanted to make a Pinot noir in the French burgundy tradition with a full body and intense color. We started with first-quality fresh handpicked whole clusters from Russian River Valley. Instead of fermenting crushed grapes as usual, we did something unique – we chopped the grapes – taking care not to crush the seeds. The chopped skins resulted in a massive increase in surface area leading to better extraction of the color, tannins, and phenolics.
The chopped grapes were fermented in a GOfermentor, and then aged 18 months in SmartBarrel liners. This unique process allows us to make wine without any additives or preservatives. Fermentation, punchdown, and aging is done in a completely airtight system, preserving the aromatics.
Only 300 bottles available of this most unusual Pinot noir.
